All meat from Federal or Provincial plants is regulated under the Meat Inspection Act and is inspected to ensure a safe food supply. The difference between Federal and Provincial inspection levels is primarily one of scale and scope, not safety. Approximately 98% of Ontario lamb is processed in Provincial plants and therefore sold within the province. Only plants that are Federally inspected can sell meat in other provinces, or other countries.
