Male birds are called cockerels, while the females are called pullets. The males and females are usually raised separately to ensure as much uniformity as possible with respect to size (weight). Many food retailers and restaurants have very specific size or weight requirements. Imagine how you would feel if you ordered chicken in a restaurant, only to discover that the people at the next table received a larger portion than you. Farmers grow their chickens to very specific weights and that is why the males and females are separated.
